» TUNA STUFFED EGGS «

(14 May 2010) - My son was in High School, when he came one day asking if I could make a Spanish dish, where he could help me do it (it was for a school project). I thought of this recipe because it was easy enough. So we made Stuffed Eggs and Ruben fell very proud of himself, and so did I.

Ingredients:

• 8 Hard boiled eggs
• 1 Can of Chunk Tuna (preferably ‘in oil’)
• 2 Tbs of tomato sauce
• Mayonnaise (better if homemade)

Peel the eggs and cut then in half longwise, reserve the egg yolks.
Place the empty half eggs in a big serving dish.
In a bowl mix with a fork the tuna (drain its oil), tomato sauce and 4 of the reserved egg yolks, until everything forms a homogeneous paste. Fill the empty half eggs with the tuna mixture (pack it full).
Using a serving spoon cover the eggs well with the mayonnaise. Sprinkle some of the remaining yolks on top. I use a big colander pushing the yolks through with my fingers to produce an even coating (you would have some leftover yolks, use them as you wish - my dog loves this treat!).

I made potatoes ‘Ali-Oli’ to go with the eggs and a salad. Any vegetable like asparagus, cauliflower or broccoli would also go well too. *Serves 4 people* - Really Delicious!
